Blueberry Salmon Sauce
Okay Fish Folk, Michigan is in FULL FRESH PRODUCE SEASON! This recipe came from loyal Fish Folk Melissa and while it's meant to as a side to salmon, our tester staff poured it over the salmon and used it as a glaze. Either way, this recipes takes blueberries from a sweet treat to a savory dish.
- 1 pint Blueberries Fresh or Frozen
- 1/2 cup Sugar or to taste
- 2 tbsp Fresh Lemon Juice
- 3/4 tsp Cumin
- 1/2 tsp Sea Salt
- 3/4 tsp Red Pepper Flakes or to taste based on how spicy you like it
- Mix all ingredients together in a saucepan. Bring to a boil and simmer until blueberries are at compote consistency (wing it!- not real long, maybe 10 minutes). If sauce is too thick thin with water. Serve along grilled salmon. Amazing!
